Our Story Mr. Van was born, February 1972 in Saigon Vietnam. Van Phan moved to the United States in 1989, to be reunited with his family at the age of 17. Van relocated in the San Francisco Bay area in Northern California. While going to school, he began working at a Japanese restaurant called Tachi Sushi. His first position was a dishwasher. Through five years of hard work and dedication, Van worked his way up from a dishwasher, prep cook, and eventually to a head chef. Van always had a passion to be a sushi chef. Eventually, he would convince his Master Sushi Chef, Mr. Suwa to allow him to train as a sushi Chef. This is where Van would finally learn his passJion for Sushi and apanese Cusine. Mr. Suwa taught Van the traditional Japanese and sushi cuisine. Mr Van began to implement the traditional Japanese cuisine and add his more modern style of fusion Japanese cuisine.
