Phở is a Vietnamese noodle soup, a bowl of Pho seems a simple noodle soup and doesn´t have rich imagination at first glance. But Pho has a very complex and intrinsic taste.

5. Crab rice noodle soup (Bún riêu)
Bún riêu is a Vietnamese meat rice vermicelli soup, It is served with tomato broth and topped with crab or shrimp paste. In this dish, various freshwater paddy crabs are used. After, these crabs are fished in rice paddies in Vietnam. Then they are cleaned carefully, the cook pound the clean crabs with the shell on into a fine paste. The paste is strained to get the crab liquid which is the base for the soup along with tomato paste.

8. Phnom Penh clear rice noodle soup (Hủ tiếu Nam Vang)
The main ingredients of Hu Tieu Noodle Soup are Hu Tieu noodle, pork bone, bean sprouts, green onions, deep-fried onion and others. The noodle is made from rice flour and tapioca flour. The noodle is dry because people cut sun-dried Hu Tieu rice paper into noodle. Before being served, the dried noodle is soft boiled. The broth is very clear, smelling and flavorful. To serve, the noodle is put into the bowl before the broth is poured onto it. Lime slices, chopped chili, herbs and bean sprouts and saute are served with the bowl of Hu Tieu. You have to use a spoon and chopsticks to eat this delicious dish. It’s similar to eating a Pho or Bun Bo Hue.

9. Soup cake (Bánh canh)
The broth of some Vietnamese rice noodle soups is clear while the broth of Soup cake (Banh Canh) is gelatinous. The rice noodle of Bun rieu is about 1 millimeters thin. The rice noodle of Bun bo Hue is 5 times thicker than the Bun rieu and the Banh canh’s noodle is 5 times thicker than the Bun bo Hue’s noodle. The noodle is big and Vietnamese called it “cake”. We have the soup (broth) and the “cake” so that we name this food Soup cake. The last thing that make soup cake different from others noodle soup is that the noodle isn’t too long so that we don’t have to use chopsticks to eat. Just use a spoon to put the broth, toppings and noodles into your mouth. It’s simple, isn’t it?

10. Quang style noodle (Mỳ Quảng)
The wide yellow turmeric noodle and the broth make Mi Quang different from others. Ingredients to cook the broth are pork and dried shrimp or chicken, duck, crab living in rice field. There are various recipes to make the broth but the broth must be yellow, slightly gelatinous, rich and have attractive smell. The broths of other noodle soups such as Pho, Hue noodle soup and Clear noodle soup are cover the noodles completely. The Mi Quang’s broth is served enough to barely cover the noodles and it will be soaked up by the noodles in a few minutes if you don’t eat the bowl of Mi Quang fast. Unlike other Vietnamese noodle soups, Quang style noodle is almost like a noodle salad.

11. Noodle with steamed duck (Mỳ vịt tiềm)
The main ingredient is duck leg which is soaked in wine, ginger and soy sauce before being flash fried. By this way we can preserves the integrity of the duck meat and removes much of the duck fat which isn’t good for health. After that it’s simmered in the broth of Vietnamese mi vit tiem made from pork bone, ginger, star aniseed, cinnamon, black cardamom, shiitake until it’s tender (not mushy), deeply seasoned and brown. 12. Congee with chicken or duck (Cháo gà, Cháo vịt)
Vietnamese chicken and rice congee is not only delicious but also healthy. It’s a comfort dish of many Vietnamese people when it’s cold or rainy, especially when they’re sick. The ingredients are garden chicken, high class long-grain rice, cabbage, persicaria odorata (Vietnamese coriander), ginger, lime (or vinegar) and spices (salt, fish sauce, sugar, chili, black pepper). The rice should be pan toasted. Then the chicken, rice and ginger are put into a big pot and bring to boil. The congee may be cooked to many different stages and textures depending on the recipes. But the rice must completely break down but still evident and the chicken is tender but not mushy. Chopped green onion is put into the pot before stopping cooking. The cook uses the shredded chicken, shredded cabbage and Vietnamese coriander to make sweet and sour salad. The sauce of salad is made from lime juice or vinegar, sugar, salt and fish sauce.

Main ingredients of Com Tam is broken rice, which is steamed before being served. This kind of steamed rice is smaller than normal steamed rice so that it’s comfortable to eat. Toppings of Broken Rice dishes are grilled pork chop, Vietnamese pork pie made from pork, wood ear mushroom, jicama egg and , thinly shredded pork skin mixed with toasted rice powder and fried egg. Some people don’t want to eat all of them with their Com Tam dish but only one or two main toppings. Banana flower salad is a favorite of people in Vietnam, especially Mekong Delta. 46. Vietnamese sweet soup (Chè)
Chè (roughly translates as “sweet soup” or “sweet pudding”) is a Vietnamese term that refers to any traditional Vietnamese sweet beverage, dessert soup or pudding. It may be served hot or cold in bowls, glasses, or over ice and eaten with a spoon.
Varieties of Vietnamese Sweet Soup are made from a range of ingredients ranging from a wide range of beans (mung beans, black-eyed peas, kidney beans) to tapioca, jellies, glutinous rice, coconut cream and fruit (longan, mango, durian, lychee and jackfruit…). Other types are made from ingredients such as aloe vera, seaweed, lotus seed, sesame seed, sugar palm seeds, taro, cassava and pandan leaf extract.
